Når man som jeg er rig med de rige, smart med de smarte og ung med de unge, så er det vigtigt at man har en Kitchen Aid røremaskine. Den er for det første utroligt dyr, for det andet kan den røre ting sammen og får det tredje er den utroligt smuk! Så det siger sig selv at sådan en skal man ha og især skal jeg ha en. Heldigvis er alt ekstra udstyret til maskinen også dyrt, så jeg har naturligvis anskaffet en kødhakker og et pølsehorn dertil, så jeg kan lave pølser.

Det gjorde jeg så, og første forsøg var med medister. Slagteren blinkede ikke da jeg bad om 5 meter tarm og det kostede kun 5 kr meteren, så jeg var glad. Det viser sig senere at 5 meter er meget. Anyways så følger her opskriften på mit første forsøg med medister:

  • 800 gram svinefars
  • 200 gram røget svinespæk (til overs fra bacon produktion)
  • 1 stort løg hakket i smadder – evt. gennem kødhakkeren
  • 2 dl mælk
  • 2 æg
  • 4 spsk mel
  • 1 buillion terning
  • ca. 1 spsk salt, godt med peber, 1 tsk alehånde, ½ tsk ingefær, 1 tsk koriander

Røget spæk køres gennem kødhakkeren, buillion terningen opløses i mælken og det hele røres sammen i røremaskinen. Farsen skal være en kende mere lind end frikadelle fars, men pas på det ikke blir for meget. Sæt tarmen over pølsehornet (det lyder frækkere end det er) og begynd at mose farsen ud i tarmen. Der skal ikke fyldes helt ud, da det udvider sig noget under opvarmning og medisteren sprækker i så fald.

Jeg kan lide min medister voldstegt, så den har fået 5 min med knald på og derefter 10-15 minutter på lav varme. Resultatet var en fantastisk smag lige som den skulle være, men jeg havde nok desværre brugt en kende for meget mælk, så farsen var blevet lidt for lind. Opskriften herover er justeret fra 2½ dl mælk til 2. Det burde gøre en forskel, men er endnu ikke efterprøvet.
